Lupulus Hibernatus is a black beer. At the end of boiling, the brewer adds a hint of cinnamon. The combination of cinnamon with the taste of roasted barley gives a powerful note to the Hibernatus. The aftertaste is both bitter-sweet and ends on a caffeine note. 

The "Lupulus" brewery, which was set up in 2004 to supply the neighbouring bistro with barrels of malted drinks, decided in 2007 to create a new beer in Champagne bottles but also in barrels. The brewers' desire was to create a beer brewed with scrupulous respect for tradition but nevertheless with unique and new olfactory and gustatory touches, using modern equipment.
